- 2 C. Basil, chopped
-1/4 C. walnuts (cut up in pieces and toasted)
-1/4 C. parmesan cheese
-3 T. oil
-2 Cloves garlic
Season with salt and pepper
Method: Basically, just chop the basil in the food processor, then add the rest of the ingredients and process some more. It is ready once it looks like pesto! You might have to add a little more olive oil to make it smooth enough.
Note: Pesto freezes well. Just freeze in edible portions.
I put this pesto on pasta the other day, a long with a splash of red wine vinegar, and some halved plum tomatoes. It was really delicious.
